Thinly sliced salmon cured with cocoa nibs served with a microgreen salad and a citrus vinaigrette 

  Chili and Chocolate-Dusted Shrimp 

Grilled shrimp lightly dusted with cocoa powder chili powder served with a mango mint salsa

  Second Course 

Cocoa-Dusted Scallops 

Pan-seared scallops dusted with cocoa powder served with a cauliflower purée and a chocolate beurre blanc

  Chocolate and Avocado Salad 

Avocado, mixed greens, goat cheese, chocolate cherry vinaigrette, candied almonds

  Third Course 

Chocolate-Crusted Grouper 

White fish with cocoa nibs and coffee crust served with roasted vegetables and a red wine reduction

  Mole Poblano Chicken 

Chicken cooked in a traditional Mexican mole sauce made with chocolate and chili peppers served with tomato rice
